Grilled Jerked Snapper (or Fluke, Triple-tail, Mahi-Mahi, or any other White Fish Fillet)

Ingredients:

  • Fish fillets

  • 1/8 cup Peppersaurus Jurassic Jerk sauce per fillet

Directions:

  1. Marinate fish fillets in Jurassic Jerk sauce in a sealed container in the refrigerator overnight

  2. Preheat grill to 400 F / medium heat

  3. Place fish fillets skin side down (if skin is not removed) on lightly-greased grill tray or aluminum foil. Do not crowd.

  4. Position fish on grill using indirect heat.

  5. Use an optional smoker box for extra flavor.

  6. Pour remaining sauce over fillets.

  7. Grill with lid closed for 12-18 minutes, depending on size of fillets.

  8. Fish should be cooked through and flakey.
